Beef Udon Noodles Recipe

Ingredients:

  • 8 oz. udon noodles
  • 8 oz. beef sirloin, thinly sliced
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 4 cups beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sake
  • 1 cup sliced shiitake mushrooms
  • 2 cups baby spinach
  • 4 green onions, sliced
  • Salt and pepper to taste

Instructions:

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large pot or dutch oven, heat the vegetable oil over medium-high heat. Add the beef slices and cook for 2-3 minutes per side, or until browned. Remove the beef from the pot and set aside.
  3. Add the garlic and ginger to the pot and cook for 1-2 minutes, or until fragrant.
  4. Pour in the beef broth, soy sauce, mirin, and sake. Stir to combine and bring the mixture to a boil.
  5. Add the sliced shiitake mushrooms to the pot and simmer for 5-7 minutes, or until tender.
  6. Add the cooked udon noodles, baby spinach, and sliced green onions to the pot. Stir to combine and cook for 2-3 minutes, or until the spinach is wilted.
  7. Return the beef slices to the pot and cook for 1-2 minutes, or until heated through.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy your delicious beef udon noodles!
