Strawberry Shortcake Recipe

Strawberry shortcake is a classic dessert that's perfect for spring and summer. This light and fluffy cake is topped with fresh strawberries and whipped cream, making it the perfect dessert for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 3/4 cup milk
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 cup heavy cream, whipped

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the bowl and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. In a separate mixing bowl, whisk together the milk, beaten egg, and vanilla extract.
  5. Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined.
  6. Transfer the dough onto a lightly floured surface and knead it gently for a few seconds until it comes together in a smooth ball.
  7. Roll the dough out into a circle that's about 1 inch thick and cut it into 6-8 wedges.
  8. Place the wedges onto a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes or until golden brown.
  9. Remove the shortcakes from the oven and let them cool for a few minutes before assembling.
  10. To assemble the shortcakes, slice them in half horizontally and place the bottom half on a plate.
  11. Add a generous scoop of sliced strawberries and whipped cream on top of the bottom half.
  12. Top with the other half of the shortcake and add another scoop of strawberries and whipped cream on top.
  13. Serve and enjoy!
